Greek chicken skewers


2 cornfed chicken thighs and breasts, sliced into 4 pieces each

1 large bunch mint

1 large bunch dill

1 large bunch oregano

200ml thick greek natural yoghurt

2 limes juice of

salt and pepper

100ml greek olive oil

2 large courgettes, cut into 8 pieces

To serve;

8 cos lettuce leaves

4 tomatoes, cut into chunks

½ cucumber, cut into chunks

1      – In a food processor blitz the herbs, 50ml olive oil, lime juice yoghurt and seasoning. Coat the chicken pieces in the marinade and leave overnight in the fridge.

2      – Alternate the chicken and courgettes on metal skewers that have been lightly oiled.

3      – BBQ or grill for 15 minutes until lightly charred.

4      – Place all the salad ingredients onto a platter, top with the chicken, drizzle with more olive oil and serve.
