1 lb 8oz golden rasins
1 lb 8oz dark rasins
1 lb firmly packed light brown sugar
240ml cold strong Yorkshire breakfast tea
120ml irish whiskey or jack daniels
1 lb 4oz unbleached all purpose flour
4 tsp baking powder
1 lrg dash salt
1 tsp grated nutmeg
1 tsp grated all spice
3 eggs, beaten

Soak the rasins, brown sugar, tea and whisky in a large bowl for 12 hours or overnight.
The next day, sift together the flour, baking powder, salt, nutmeg, and allspice and add the to the raisin mixture along with the beaten eggs and lemon rind.
Set the oven at 150c / 300F. Put the batter into a greased pan, and bake for 90 minutes. When done, remove from the pan and let cool on a rack. You can leave it simple, dress it up with icing, or drizzle with honey and warm water mixture.
Serve with Strawberry jam, butter and soft whipped cream.
