Ingredients

For the pancakes:
  • 200g flour
  • 25g butter, melted plus more for frying.
  • 10g caster sugar
  • 1tsp baking powder
  • 3 eggs
  • 200ml buttermilk
To serve:
  • Blueberries
  • Maple syrup

Method

Place all of the pancake ingredients into a bowl and whisk together.

Fry spoonfuls of the batter in melted butter over a medium heat for one minute, before flipping over and cooking for a further minute.

Serve onto plates, sprinkle over the blueberries and drizzle over the maple syrup to finish.
