Ingredients

  • 3 pears, peeled and diced
  • 3 cox apples, peeled and diced
  • 50g butter
  • 50g caster sugar
  • Splash of vodka
Crumble
  • 200g plain flour
  • ½ tsp ground ginger
  • 100g butter, diced
  • 100g demerara sugar
Custard
  • 300ml milk
  • 300ml double cream
  • 2 vanilla pods or 1 tsp vanilla bean paste
  • 75g caster sugar
  • 8 egg yolks
  • Splash of vodka

Method

  1. Preheat the oven to 180°C.
  2. Place the fruit into a pan with the butter and sugar, simmer for 5 mins until just soft. Pop into an ovenproof dish and splash over the vodka.
  3. Mix the crumble ingredient together in a bowl using your fingertips until it resembles breadcrumbs, then sprinkle over the filling. Bake for 45 mins.
  4. To make the custard, put the milk and cream in a pan with the vanilla and half of the sugar, warm through gently.
  5. Whisk the egg yolks with the remaining sugar.
  6. Pour the milk mixture over the yolk mix, and whisk together.
  7. Transfer this to the pan, continuously whisking until it thickens, then whisk in the vodka and sieve off into a bowl.
