Ingredients
- 4 Bramley apples, peeled cored and sliced
- 4 granny smith apples, peeled cored and sliced
- 125g butter, melted
- 125g caster sugar
- 400g plain flour
- 200g butter, diced
- 200g soft brown sugar
- Pinch of salt
- 8 egg yolks
- 75g caster sugar
- 300ml milk
- 300ml double cream
- 1 tsp vanilla bean paste
- Few sprigs of thyme
Method
Pre heat the oven to 160c
Mix the melted butter, sugar and apples then place the apple mix onto an oven proof dish.
Mix the crumble mix together in a bowl and mix until it resembles breadcrumbs. Sprinkle over the apples then bake for 1 hour to 1 hour 15 minutes.
To make the custard, put the milk and cream in a pan with vanilla and thyme and half the sugar and warm gently through.
Whisk the egg yolks with the remaining sugar.
Pour the milk mixture over the yolk mix, and whisk together.
Transfer this to the pan, continuously whisking until it thickens sieve off into a bowl.
