Arbroath Smokie Welsh Rarebit

This Arbroath Smokie Welsh Rarebit dish combines some of James' favourite ingredients for a dish that is decadent and delicious. Arbroath Smokie is actually haddock that has been been cleaned, prepared, salted, washed, hung and smoked!

Ingredients

Rarebit
  • 500g grated cheddar cheese
  • 100ml bitter
  • 1 tsp Worcester  sauce
  • 1 tsp English mustard
  • Few drops Tabasco
  • 2 tbs plain flour
  • 1 egg yolk

 

  • 2 Arbroath smokies

Method

Pre heat the grill to high

Gently melt the cheese in a pan, add all the remaining rarebit ingredients and gently bubble.

Flake the smokies into ovenproof dishes, pour over the rarebit mix then grill until bubbling and slightly charred.
