Baked Sardines with Tomatoes on Toast

Summer is the best time to buy sardines, did you know that? This simple dish of Baked Sardines with Tomatoes on Toast recipe makes the most of this fantastic ingredient. This is on the menu at James' restaurant!

Ingredients

  • 4 sardines, gutted and scaled, backbone removed
  • 25ml olive oil
  • 1/2 red onion, peeled and sliced
  • 2 cloves garlic, sliced
  • 2 large tomatoes sliced
  • 1 small bunch basil torn
  • 2 slices charred bread
  • 1 tsp sherry vinegar
  • Salt and pepper

Method

Pre-heat the grill to high.

Pop the tomatoes and onions on a tray and grill for 1 to 2 minutes.

Pop the charred bread on a baking tray, top with tomatoes and onions, drizzle in sherry vinegar and then place the sardines on top.

Drizzle in oil season and grill for 2 minutes.

To serve, pop onto a plate top with basil and  drizzle over olive oil.
