Ingredients
- 2 x 200g Trout
- 15ml olive oil
- Salt and pepper
- 150g unsalted butter
- 50g flaked almonds, toasted
- 100g green beans, blanched
- 1 tsp capers
- ½ shallot, diced
- 1 small bunch parsley, chopped finely
- 1 lemon
Method
Pre-heat the oven to 220c.
Put the trout onto a greaseproof disc season then pop onto a tray and cook for 5 to 6 minutes in the oven. Put the beans into the boiling water and cook for 3 to 4minutes too, then drain.
Heat the butter until nut brown, stir through the almonds, capers and shallot, squeeze in the lemon.
To serve, put the trout onto a plate with the green bean butter sauce.
