Baked Trout with Beurre Noisette, Almonds and Green Beans

This Baked Trout with Beurre Noisette, Almonds and Green Beans is a classic recipe. The sauce has almonds, shallots, capers, parsley and more in! The sauce also works with most fish. Quick, looks beautiful, tastes amazing!

Ingredients

  • 2 x 200g Trout darnes
  • 15ml olive oil
  • Salt and pepper
  • 150g unsalted  butter
  • 50g flaked almonds, toasted
  • 100g green beans, blanched
  • 1 tsp capers
  • ½  shallot, diced
  • 1 small bunch parsley, chopped finely
  • 1 lemon

Method

Pre-heat the oven to 220c.

Put the trout onto a greaseproof disc, season then pop onto a tray and cook for 5 to 6 minutes in the oven.

Put the beans into the boiling water and cook for 3 to 4 minutes too, then drain.

Heat the butter until nut brown stir through the almonds capers shallot squeeze in the lemon.

To serve, put the trout onto a plate with the green bean butter sauce.
