Ingredients

  • 200g butter
  • 200g caster sugar
  • 200g self-raising flour
  • 3 eggs
  • 2 bananas
  • 100g pecans chopped
  • 2 tablespoons honey
For the icing:
  • 200g mascarpone
  • 200g crème fraiche
  • 1 teaspoon honey
  • ¼ lemon, juice only
For the candied bananas:
  • 3 bananas sliced lengthways
  • 2 tablespoons icing sugar
To garnish:
  • Banana chips

Method

Pre heat the oven to 180°C.

To make the cake beat the butter and sugar in a kitchen aid until the mixture turns pale.  Add the pecans and bananas then beat until smooth. Add the eggs and continue beating until they are thoroughly combined, then fold the flour in by hand.

Spoon into a 2lb lined loaf tin and bake for 45 minutes, or until a skewer inserted into the cake comes out clean. Allow to cool.

To candy the bananas, dust them with icing sugar and blowtorch (or place under the grill) until the sugar caramelises.

To make the icing, whisk together the mascarpone, crème fraiche and honey with a squeeze of lemon juice. Spoon it over the cake, dot with dried banana chips and lay over the candied bananas. Drizzle on more honey and serve your Banana and Honey Cake.
