Ingredients
- 50ml olive oil
- 1 onion, peeled and diced
- 3 cloves garlic peeled and crushed
- 2 x 400g chopped tinned tomatoes
- 1 tsp dried oregano
- 16 dry cannelloni
- 16 thin beef sausage, skin removed
- pinch of nutmeg
- 1 small bunch basil torn
- Salt and pepper
- Pinch grated nutmeg
- 2 balls mozzarella sliced
- 50g grated parmesan
Method
Pre heat the oven to 180c.
In a pan, fry the onion and garlic in oil for 5 minutes then add all the tinned tomatoes, oregano, nutmeg and basil. Bring to the boil then simmer for 5 minutes, season.
Fill each tube with a sausage and place into a large oven proof dish. Top with sauce, dot with mozzarella, grate over parmesan and bake for 45 minutes.
Drizzle in extra olive oil if desired
