Ingredients

  • 1kg beef shin, diced
  • 2 tbsp plain flour
  • 2 tbsp olive oil
  • 2 onions, peeled and diced
  • 2 garlic cloves, peeled and diced
  • 6 large carrots, peeled and halved
  • 500ml beef stock
  • 2 bay leaves
  • 2 sprigs of thyme
  • 125g suet
  • 200g self-raising flour
  • 1 small bunch of parsley, chopped
  • Salt and pepper
  • 150ml cold water

Method

  1. Coat the beef in seasoned flour and fry in batches in the oil. Pop into a large saucepan with the remaining ingredients, bring to the boil, then simmer for 2 hrs. Pour into a large casserole dish.
  2. Preheat the oven to 200°C.
  3. Mix all the ingredients together for the dumplings, then roll into 8 balls. Pop on top of the stew, then cook in the oven for 30 mins.
