Ingredients

  • 2 onions, sliced
  • Knob of butter
  • 15ml vegetable oil
  • 600g Minced beef
  • Salt and pepper
To serve
  • 1 Little Gem lettuce
  • 1 large tomato, sliced
  • 200g Kimchi
  • 4 brioche buns, toasted
  • 300g Cheddar cheese, sliced
  • 4 tbsp mayo

Method

  1. Heat a BBQ until hot and the coals have turned white.
  2. Cook the onions in butter and oil for approximately 30 minutes, until nicely caramelised. Set aside
  3. Mix the minced beef with salt and pepper and mould into rounds. Drizzle them with oil, place the burgers on to the BBQ and gently cook for five minutes. Flip the burgers over, top with a square of cheese and continue to cook them for a further five minutes.
  4. Toast the brioche buns, sliced sides down.
  5. To serve, layer up the brioche base starting with the meat, then top with lettuce, onion, tomato and kimchi. Drizzle over mayo before securing with a stick.
