Blackened cod, marinated for three days in miso, sake, and mirin. Roasted over coals and served with BBQ leeks and grilled broccolini. Deep yet delicate in flavour! Delicious!
Pop the miso, sugar, sake and mirin in the pan, bring to the boil, and then simmer for three minutes. Allow this to cool.
Pour the ½ the sauce over the fish and marinade it in the fridge for three days. The remaining sauce can be kept in an airtight jar for a month in the fridge.
Heat a BBQ until hot and the coals are white.
Put the fish onto a tray and roast for eight minutes.
Pop the marinade in a pan and reduce by half.
Place the leeks into the coals of the BBQ then grill the broccolini. Remove the outer blackened layer of the leek, slice and sit on a plate with the charred broccolini. Sit the fish on top and drizzle over the sauce.
