Blackened Cod with Winter Veg Stir Fry

This Blackened Cod with Winter Veg Stir Fry is a really simple dish to make. You could use salmon or even prawns for this recipe too. The fish needs to be in the marinade for some time, ideally 2-3 days but at least overnight.

Ingredients

  • 2 x 200g Cod portions
  • 300g Miso
  • 300g Caster Sugar
  • 100ml Sake
  • 100ml Mirin
To serve:
  • Spinach
  • Veg oil
  • Ginger
  • Garlic
  • Broccollini
  • Kale

Method

Pop the miso, sugar, sake and mirin in the pan, bring it to the boil, and then simmer this for three minutes. Allow this to cool.

Pour the sauce over the fish and marinade it in the fridge for three days.

Put the fish onto a tray and grill for eight minutes.

Stir fry all the veg for 3 mins, sit on a plate top with fish.
