Ingredients
- 1 red cabbage, sliced
- 3 apples, grated
- 100g sultanas
- 200ml red wine
- 100ml honey
- 3 star anise
- 2 tbs redcurrant jelly
- Sea salt
- Veg oil for frying
- 6 eggs
- 100g plain flour, seasoned
- 2 beaten eggs
- 100g panko breadcrumbs
- To serve – a little gem and chicory
- 2 x 200g seabass portions
- Splash of veg oil
- Knob of butter
Sauce
- 25g butter
- 250ml milk from above
- 1 tbs plain flour
- 50ml white wine
- 1 tbs grain mustard
- 1 tsp Dijon mustard
- few chives chopped
- Squeeze of lemon
- 1 chinese or white cabbage, shredded
- 3 garlic cloves, peeled and grated
- 10cm ginger, peeled and grated
- 100g caster sugar
- 100ml rice wine vinegar
- 3 star anise
- 1 small bunch mint and coriander, chopped
- 2 limes, juice and zest
Method
Red Cabbage
Place the cabbage into a large pan add the apples sultanas wine honey and star anise season and cook on medium heat for 30 minutes. Finish with the jelly.
Deep Fried Soft-Boiled Egg
Get a large sauce pan of water onto a rolling boil, and add 6 eggs cooking for 6 minutes – shock the eggs in cold water and remove the shell taking care to not break the egg. When all are peeled, dip each in flour, egg wash and then breadcrumbs ensuring each egg is completely coated. Then deep fry at 180c for about 1 minutes until golden, set on kitchen paper to drain. Spoon the cabbage onto a plate top with an egg garnish with little gem and chicory.
Pan fried seabass with mustard sauce
For the sauce, heat the butter when foaming whisk in the flour then whisk in the milk, wine, lemon and mustard. Season. Finish with chives and season.
Pan fry the fish in oil for 2 minutes flip over add the butter and cook for another 2 minutes.
Spoon the cabbage onto a plate top with the fish spoon over the sauce.
Kimchi
Put the cabbage into a bowl with salt for 1 hour, rinse .Bring the sugar and vinegar to the boil with the ginger garlic and star anise in a muslin bag mix with all the remaining ingredients pop in the fridge overnight .
Take the star anise bag out of the cabbage mixture and drain.Mix with herbs and lime.
Cavolo Nero
Place all the ingredients into a hot pan and cook for 2 minutes.
