Ingredients

Cauliflower Cheese
  • ½ onion
  • 1 bay leaf
  • 1 clove
  • 100g butter
  • 50g plain flour
  • 1ltr full fat milk
  • 400g grated cheddar cheese
  • 1 tbs Dijon mustard
  • 1 tsp Hendersons
  • 1 cauliflower, cut into florets blanched
Lobster Mac and Cheese
  • 100g butter
  • 15g plain flour
  • 300ml milk
  • 300ml double cream
  • 2 bay leaves
  • 300g grated cheddar cheese
  • 400g macaroni
  • 1 lobster cooked flesh removed
  • 1 small bunch parsley, chopped
Croque Monsier
  • 25g butter
  • 20g flour
  • 250ml milk
  • 125g grated gruyere
  • Splash of Hendersons
  • 1 tsp Dijon mustard
  • Pinch of nutmeg
  • 6 thick ham slices
  • 4 sliced bread
  • 50g butter

Method

Cauliflower Cheese

  1. Pre-heat the grill to high
  2. Warm the milk and then stud the onion with the bay and clove, add to the milk to infuse.
  3. To make the sauce, melt the butter in a pan, whisk in the flour and then add the milk gradually, having removed the onion.
  4. Add half the cheese to the sauce then take off the heat and add the mustard and Hendersons. Season.
  5. Pop the cauliflower in an oven proof dish and pour the sauce over the top.
  6. Top with rest of the cheese and pop under the grill for 2 minutes.

Lobster Mac n Cheese

  1. Pre-heat the oven to 240C.
  2. To make the ‘mac n cheese’, melt the butter in a pan, whisk in the flour and then add the milk, and cream.
  3. Cook the pasta as per the packet instructions.
  4. Add half the cheese to the sauce and take off the heat.
  5. Drain the pasta and season the sauce then pour onto the pasta and mix together. Pour into an ovenproof dish and top with the lobster and cheese. Pop under the grill for 5 minutes.

Croque Monsier

  1. Make a classic bechamel by melting butter, adding the flour and cooking out. Then add the milk slowly and whisk until smooth. Finally add the cheese and season to taste. Chill this down.
  2. Pre heat the oven to 200c
  3. Pan fry the bread in butter until crisp, layer up with ham then spread a good layer of the bechamel on the bread.
  4. Roast in the oven on a tray for 6 to 8 minutes.
