Ingredients

Cheese and Thyme Straws (serves 2)
  • 300g puff pastry, rolled out
  • 50g grated Parmesan
  • 50g grated Cheddar or Gruyère cheese
  • Few sprigs thyme, leaves removed and chopped
  • Pinch of sea salt
  • 1 egg yolk
Palmiers with Marmite and Cheddar - serves 24
  • 250g puff pastry sheet
  • 60g marmite, warmed slightly
  • 100g grated Cheddar cheese

Method

Cheese and Thyme Straws

  • Pre heat the oven to 200°C
  • To make the straws, brush the rolled out pastry with beaten egg yolk. Then sprinkle over the Parmesan and Cheddar or Gruyère, sea salt and thyme.
  • Cover in greaseproof paper and then roll over with a rolling pin.
  • Cut the pastry into 2 cm strips, twist and place onto a baking sheet.
  • Bake for 8 to 10 minutes.

Palmiers with Marmite and Cheddar

  • Pre heat the oven to 180°C
  • Roll out the puff pastry to an even Rectangle, 3 mm thick.
  • Spread marmite evenly over the surface of the pastry sprinkle over the cheese.
  • Working from the longer side of the rectangle, roll the pastry until you reach the centre of the rectangle, repeat with the opposite side until the two rolls meet in the middle.
  • With a sharp knife cut the Palmiers and lay onto a greaseproof sheet lined baking tray.
  • Bake for 10 minutes until golden and crisp.
  • Cool on a wire rack.
