Ingredients

  • 3 slices sour dough
  • 2 eggs
  • 50ml milk
  • Salt and pepper
  • 6 slices gruyere cheese
  • 12 slices pancetta
  • 3 tomatoes
  • Few sprigs thyme
  • 100g butter
  • 50ml maple syrup

Method

Pre heat the oven to 170c.

Slice the tomatoes in half horizontally, pop on a tray, season, sprinkle with the thyme, dot with butter and bake for 1 hour.

To make the sarnie, fry the pancetta until crisp, beat the eggs and milk together, layer up the bread with cheese, tomatoes and pancetta, dip in the egg mix and pan fry in butter until golden and crisp. Drizzle over maple syrup and serve!
