Ingredients

  • 400g skinless boneless chicken thighs trimmed and cut into 1.5cm pieces
  • 1 cucumber
  • 1/2 red onion thinly sliced
  • Small bunch coriander
  • 1 lime
  • 1 red chilli
  • Chinese chilli oil
  • Small packet roasted peanuts
  • 1 tsp caster sugar
Marinade
  • 3 tbsp “jimmy’s” satay sauce
  • 1 tbsp light soy sauce
  • 2 tbsp kecap manis
  • 1 tsp fish sauce
  • 1 tbsp honey
  • Juice 1/2 lime
Sauce
  • 3 tbsp crunchy peanut butter
  • 2 tbsp light soy sauce
  • 2 tbsp brown sugar
  • 4 tbsp coconut milk
  • Juice of 1/2 lime

Method

Method for marinade

Combine all marinade ingredients with chicken, refrigerate overnight. Next day thread onto wooden skewers and place on a tray, pour over any remaining marinade.

Method

Combine all ingredients and adjust seasoning. Serve in a small sauce dish, top with freshly chopped peanuts/ coriander/ red chilli and a splash of Chinese chilli oil

Cook the skewers over a bbq or ridged pan.

Peel cucumber, remove seeds and cut into thickish slices.

In a mixing bowl add cucumber, red onion, chilli thinly sliced a pinch of salt, sugar and a squeeze of lime, let stand for a minute, then add 2 tbsp roughly chopped coriander.

Divide between 4 plates, place cooked skewers on top and garnished sauce on side.
