Chicken Wings with Blue Cheese Dressing

This Chicken Wings with Blue Cheese Dressing is made in three stages, first the chicken wings, then the glaze and then the dressing. Deep fry the wings in batches for around 4-5 minutes and make sure you buy plenty. The glaze is made with orange, lemon, thyme stock, honey and sherry vinegar. The blue cheese dressing is outstanding and so simple to make. Delicious!

Ingredients

  • 1 kg chicken wings
Sauce:
  • 2 oranges juice and zest
  • 100ml honey
  • 1 lemon juice and zest
  • 4 cloves garlic chopped
  • few sprigs thyme
  • 200ml chicken stock
  • Touch of sherry vinegar (optional)
Dressing:
  • 100g blue cheese
  • 100ml mayo
  • 100ml crème fraiche
  • 1 tsp Worcester sauce
  • few drops Tabasco
  • Black pepper
To serve:
  • Little gem lettuce

Method

Deep fry the chicken wings in batches at 180c for around 4-5 minutes.

Place all the ingredients for the chicken sauce in a pan, bring to the boil, reduce until sticky. Add the chicken wings to the sauce and turn off the heat.

For the dressing, put all the ingredients into a food processor and blitz until smooth.

To serve, put the lettuce all over a platter top with wings drizzle over the dressing.
