Chicken wings with sauerkraut and hot dogs

This recipe for chicken wings with sauerkraut and hot dogs is a perfect Saturday taste sensation. James used sauerkraut from The Crafty Pickle Co and his glaze is made with vegetable oil, cumin seeds, honey, ketchup and chilli.

Ingredients

Wings
  • 1kg chicken wings
  • vegetable oil, for frying
Glaze
  • 1 tbsp vegetable oil
  • 1 tsp cumin seeds
  • 150g honey
  • 2 tbsp ketchup
  • 1 chilli, diced

To serve
  • sauerkraut
  • few sprigs of mint, chopped
  • few sprigs of coriander, chopped
Hot dogs
  • 4 frankfurters, heated until hot
  • 4 hot dog buns
  • glaze, from above
  • coriander mayo
  • few sprigs of mint and coriander

Method

Chicken wings with kraut

  1. Heat the vegetable oil to 180°C.
  2. Deep fry the wings for 6-8 mins until crisp and cooked through, then drain onto kitchen paper.
  3. Mix all the ingredients for the glaze in a pan and heat until hot and bubbling.
  4. Roll the wings in the glaze, pile onto the sauerkraut, and sprinkle over the mint and coriander.

Hot dogs with kraut

  1. Use the glaze from above to roll the hot dogs in.
  2. Fill the buns with sauerkraut, top with the glazed hot dogs, herbs and a drizzle of mayo.
