- 16 brined or fresh anchovies

Method
Onion and Anchovy Tart
Pre heat the oven to 200C.
Lightly roll out the pastry, egg wash, then top with crème fraiche, onions and anchovies. Sprinkle over the thyme and bake for 15 minutes.
Blue Cheese and Fig Tart
Pre heat the oven to 200C.
Roll out the pastry, cut into 6 squares, then cut a triangle in each corner. Egg wash, then curl the corners over top and fill the centre with figs, chicory, cheese and pancetta. Sprinkle over the thyme and bake for 15 minutes. Drizzle in honey.
Apple and Marzipan Tart
Pre heat the oven to 200C.
Roll out the pastry egg wash, then top with marzipan and apples. Bake for 15 minutes.
