Cioppino is an Italian American seafood stew made with tomatoes and wine. Often made with the catch of the day it is a rustic stew that originates in San Francisco!
Heat a third of the oil in a large pan and add the garlic, shallot and star anise. Pop in tomatoes, bring to the boil, then simmer for 5 mins.
Add the prawns, mussels, clams and salmon, followed by the wine. Once bubbling, add the rest of the oil, then season, pop the lid on and cook for 5 mins.
To serve, sprinkle over parsley and drizzle in more oil if desired.
