Club Sandwich and Pancetta and Pickle Sarnie

Two sandwiches to satisfy your hunger! First up the Club Sandwich..Toasted sourdough layered with crispy pancetta, gruyere, chicken, ham, sunblush tomatoes and homemade Dijon mayo. Second, Pastrami and Pickle...cheese-fried bread stacked with pastrami, pancetta, pickles and mustard mayo. Big flavour, no fuss. James used ingredients from Cosgriff and Sons Bakery!

Ingredients

  • 3 slices sour dough, toasted
  • salt and pepper
  • 6 slices gruyere cheese
  • 12 slices pancetta
  • 6 sunblush tomatoes
  • few sprigs thyme
  • 160g cooked chicken
  • 2 thick slices ham
  • 1 little gem lettuce
Mayo
  • 3 egg yolks
  • 1 tbs Dijon mustard
  • 200ml veg oil
  • Salt and pepper
Pastrami and pickle sarnie
  • 200g pastrami
  • 100ml mayo
  • Dijon mustard
  • 12 slices pancetta fried until crisp
  • 2 large pickles sliced
  • 3 thick slices bread toasted
  • 50g grated parmesan cheese
  • 200g grated cheddar

Method

Club Sarnie – serves 1

Heat a BBQ until the coals are hot and white

To  make the mayo by blitzing the eggs and Dijon slowly drizzle in the oil until thick season.

To make the sarnie, Fry the pancetta until crisp Layer up the pancetta chicken and ham with the lettuce and tomatoes and lots of mayo.

Pancetta and Pickle Sarnie – serves 2

Mix the mayo and mustard together.

In a pan add the cheese fry until just crisp pop 1 of the toasted bread slices in , then remove from the pan .Place the other slice of toasted bread onto a plate layer up the pastrami pancetta mayo mustard and pickles fat drizzle in mustard sit the cheesy bread lid on top and serve
