Cod and Clams
  • 2 x 200g cod darne portions
  • Splash veg oil
  • Salt and pepper
  • 200g clams
  • Splash of wine
  • 1 shallot
  • ½ bulb garlic
  • 2 soft chorizo sliced
  • Few sprigs oregano
Pan Fried Cod
  • 4 x 200g cod pieces
  • 1 tbs table salt
  • 25ml olive oil
  • 25g butter
  • salt and pepper
  • 4 roasted peppers
  • 200g clams
  • 1 tsp smoked paprika
  • Splash white wine
  • 50 ml olive oil
  • Few sprigs oregano
Salt Cod on Toast
  • 500g salt cod soaked overnight
  • 400ml milk
  • 500g Mash
  • Toasted sourdough

Method

Cod and Clams

Place all the ingredients into an oven proof dish top with the fish then roast in the oven at 240c for 10 minutes.

Pan Fried Cod

Salt the cod leave for 10 minutes wash off and pat dry. Heat a pan with the oil and butter to a medium heat pop the cod in with the thyme and garlic cook gently for 5 minutes then flip over , rest the fish then add the clams wine and peppers to the pan cook until the clams are open.. Spoon onto plates top with fish.

Salt Cod

Cook the cod in milk until soft drain flake into ta kitchen aid bowl add the mash then beat with a k beater until smooth add 75ml of the cooking milk beat again spoon into a serving bowl and serve with toasted sourdough.
