Ingredients
- 1 kg cod
- 1 x 400g coconut milk
- 200g prawns
- 50ml sesame oil
- 1 x 10cm piece of fresh ginger or galangal
- 5 garlic cloves
- 1 bunch of coriander
- 2 tbsp shrimp paste from above
- 2 green chillies
- 2 lemongrass
- 4 kaffir lime leaves
- 1 shallot, peeled and diced
- 100g baby spinach
- 1 bunch of coriander
- 2 bunches of basil
Method
Fry the shrimp in sesame oil and blitz.
In a food processor, blitz all the ingredients for Paste 1 together.
In a pan, heat the ingredients for Paste 2 with the coconut milk and gently cook for 5 minutes. Then add to Paste 1 and blitz.
Then add the spinach, basil and coriander, blitz.
Pan fry the cod in a little oil and butter then roast for 8 minutes.
To serve, sit the cod on a plate with the sauce.
