Ingredients

  • 400g mussels
  • Splash of white wine
  • 4 scallops, halved
  • 200g prawns, raw, peeled
  • 50g butter
  • 100ml double cream
  • 600g mashed potato
  • Grated Parmesan

Method

  1. Pre heat the oven 200°C.
  2. Start by heating the wine in a pan. Pop in the mussels then put a lid on cook for 3 minutes until all the mussels are open. Drain them into a sieve balanced on top of a bowl to keep the cooking liquid, then remove the mussel meat.
  3. Put the scallops and prawns into a hot frying pan with a knob of butter and cook for 2 minutes. Add the cream, 75ml of the mussel cooking juice add the parsley then spoon the shellfish into scallop shells.
  4. Pipe the potato around the edges then sit on a baking tray. Grate over some Parmesan and bake for 15 minutes.
