Ingredients
- 250g plain flour
- 1 tsp baking powder
- 3 eggs
- 200ml milk
- 2 tbs chopped parsley
- 1 lime zest only
- 75g brown crab meat
- 8 tomatoes
- Few sprigs thyme
- 4 garlic cloves peeled and sliced
- Drizzle olive oil
- 300g white crab meat
- 100g brown crab meat
- 150g crème fraiche
- 2 limes juice and zest
- 250g butter softened
Method
Heat the oven to 100c.
Slice the tomatoes in half horizontally, place on a baking tray top with thyme, garlic and olive oil, slow roast for 1 hour.
Pre heat the grill to high.
Heat a waffle machine to high.
To make the waffles whisk all the ingredients together ladle into a waffle machine and cook until golden, pop onto a baking tray keep warm.
Mix together the crab crème fraiche limes and butter, spoon onto the warm waffles with the tomatoes sprinkle over lovage.
