Fillet Steak with Taleggio Cheese

You can't beat steak and cheese and this recipe uses fillet steak and Taleggio cheese for a really tasty treat! Serve with some beautiful new potatoes!

Ingredients

  • 400g cooked new potatoes, halved
  • 2 cloves of garlic, sliced
  • 2 sprigs of thyme, chopped
  • 3 leeks, sliced
  • 200g Taleggio cheese
  • 100ml double cream
  • 50g butter
  • Salt and pepper
  • 25ml olive oil
  • 600g fillet steak, cut into 4
  • Salt and pepper
  • 25g butter

Method

Pre heat the grill to high.

Place a pan over a medium heat and add the butter. When the butter has melted add the potatoes, garlic, thyme and leeks. Season then add the cheese, followed by the cream. Place under the grill for five minutes until the cheese has melted and is slightly golden.

Meanwhile to cook the steaks heat a fry pan over a medium heat until hot then add the oil. When the oil is hot, add the steaks and cook on both sides for 2 to 3 minutes. Add the butter and as it foams, nappe over the steaks.

Season with salt and pepper and rest for 5 minutes before serving with the potatoes.
