Ingredients

  • 397g condensed milk
  • 450g light soft brown sugar
  • 125g butter
  • 125ml milk

 Equipment required 20cm tin, lined and food thermometer

To create a knickerbocker glory
  • 1 tub vanilla ice cream
  • toasted marshmallows
  • Dulce de leche
  • Sprinkles
  • Stewed plums
  • Whipped cream

 

Method

Heat a large pan and add butter,milk and condensed milk. Add sugar and slightly mix. Once the mixture starts to heat, stop stirring.

Use water and a pastry brush and gently brush around the side of the pan, this is to stop the sugar crystallising round the edge.

Use a digital thermometer to check the temperature of the mixture once it begins to boil, it should be at 112c to 114c. Take the mixture off the heat once it hits the temperature. Whisk once it has cooled to 110c.

Pour the mixture into the tin, and allow to set at room temperature. for 2-3 hours

To create a knickerbocker glory, layer up all of the above crumbling in the fudge.
