Put the sloes, sugar and gin into a pan and gently simmer for 10 minutes.
Heat the veg oil to 175c. Whisk all the ingredients together for the cakes, pour into a piping bag and pipe into the oil in circles, fry until golden brown then flip it over.
Using a slotted spoon, lift onto a tray lined with kitchen paper and repeat.
To serve spoon the compote onto a plate, top with the cake and dust with icing sugar.
