Ingredients

  • Vegetable oil for frying
  • 1 tsp salt
  • 2 tsp baking powder
  • 450g plain flour
  • 3 medium eggs
  • 4 tbs caster sugar
  • 450ml milk
  • 2 tbs gin
  • icing sugar to dust
For the compote
  • 300g sloes
  • 4 tbs gin
  • 100g caster sugar

Method

  1. Put the sloes, sugar and gin into a pan and gently simmer for 10 minutes.
  2. Heat the veg oil to 175c. Whisk all the ingredients together for the cakes, pour into a piping bag and pipe into the oil in circles, fry until golden brown then flip it over.
  3. Using a slotted spoon, lift onto a tray lined with kitchen paper and repeat.
  4. To serve spoon the compote onto a plate, top with the cake and dust with icing sugar.
