Ingredients

  • 2 round Halloumi cut in ½ horizontally
  • 1 tbs olive oil
  • 2 chicory 1/4d
  • 4 spring onions, sliced
Chilli Jam:
  • 1 tbs olive oil
  • 1 red onion, peeled
  • 2 red peppers, cored, sliced
  • 3 red chillies, chopped
  • 3 garlic cloves, peeled
  • 400g tinned tomatoes
  • 500g soft brown sugar
  • 100ml red wine vinegar
  • 3 lemongrass stalks, tough outer layer removed, finely chopped
  • Salt and pepper
Flat bread:
  • 300g self raising flour
  • 100g thick greek yoghurt
  • Pinch salt
  • Water to bring together

Method

Heat a pizza oven and BBQ until hot.

To make the chilli jam put all the ingredients into a pan, bring to the boil then gently bubble for 45 minutes cool then blitz.

Pan fry the halloumi in oil until golden, pop to one side.

Mix the flour and yoghurt and enough water to bring the dough together. Pin out on a baking sheet dusted in flour it should be 1 cm deep, top with chilli jam all over and chicory, spring onions, halloumi and drizzle in olive oil.

Season with pepper and then pop in the pizza oven for 8 to 10 minutes.
