Halloumi Chicken Schnitzel

This Halloumi Chicken Schnitzel starts with frying the halloumi to colour it. The secret to the success of this dish is top quality ingredients. It is such a simple and tasty dish...you'll want to eat it all over again!

Ingredients

  • 2 x chicken breast, cut horizontally
  • 100g thinly sliced halloumi cheese
  • 2 thick slices ham
  • 2 eggs
  • 100g plain four, seasoned
  • 100g panko
  • 75g butter
  • 15ml olive oil

Method

Fry the halloumi in a pan with some oil to add colour.

Place the chicken between cling film and bash out to 5mm thick.

Fill the centre with fried halloumi and ham. Dip them into the flour, egg and then the breadcrumbs.

Fry them off for three minutes until they are golden brown and crispy, nappe with butter.

To serve more halloumi, lemon wedges and watercress.
