Ham, eggs and chips

This ham, eggs and chips recipe is simple and so delicious. The ham is glazed with orange and maple syrup. To ensure the yolk is exactly in the middle of your fried egg just shake them for 10 seconds before cracking them into your frying pan!

Ingredients

  • 1 x 3 kilo ham joint
  • 1 onion
  • 2 bay leaves
  • 100g carrots, chopped roughly
  • 1 celery stalk, chopped roughly
  • 200ml maple syrup (grade A)
  • 1 orange, juice and zest
  • 20 cloves
To serve:
  • Fried eggs
  • Chips

Method

Put the ham into a large pan with the onion, bay leaves, carrots and celery then cover in cold water. Bring to the boil then simmer on a low heat for 2 hours before removing and allowing to cool.

Pre-heat the oven to 160°C. Remove the string and the layer of fat from the gammon then place onto a roasting tray. Stud with cloves then pour over the maple syrup and orange juice and sprinkle over the orange zest.

Bake for 30 minutes, basting every 10 minutes.

Remove from the oven, slice and serve with chips and fried eggs.
