Method
Classic Jersey Royals
Cook the jerseys in boiling salted water until just cooked dot with butter and parsley and season.
Jersey royal and crab salad
Serves 4
Mix all the ingredients together for the dressing. Gently mix the potatoes crab onions and chillies spoon over the dressing. Dot with watercress.
Salt baked Jerseys
Serves 6
Preheat the oven to 170°C
Mix the flour, salt ,water into a dough roll out on a lightly floured surface to 5 mm thick in round circle.
Place the jerseys in the centre cover in the other pastry layer and seal , tie around rope then place onto a baking tray, and bake for 1 hour to 1 hour 15 minutes.
Cut away the crust carefully cut away the skin
Jerseys with Kelp
Cook the jerseys in cold water with the kelp until just cooked dot with butter.
