Kedgeree

Kedgeree is a classic dish, often served for breakfast or brunch and is made with rice, eggs, smoked haddock, cream, curry powder and more. Get it right every time with this masterclass recipe from James!

Ingredients

  • 1 onion
  • 50g butter
  • 300g long grain rice
  • 1 tsp madras curry powder mixed with 2 tbs water
  • Fresh nutmeg
  • 200ml milk
  • 100ml double cream
  • 250ml water
  • 300g natural smoked haddock
  • Small bunch parsley chopped
  • Salt and pepper
  • 3 soft boiled eggs
  • To serve knob of butter
  • Lemon wedges

Method

Gently fry the onion in butter without colour.

Add the rice, coat all over, add the curry powder mix and nutmeg then top with the milk, cream and water.

Bring to a simmer, then pop the fish on top, cover in a cartouche and cook for 15 minutes. Season, sprinkle with parsley and top with eggs.

Finish with butter and lemon wedges.
