Kipper Fishcakes and Baked Kippers with Apple Butter

Not one but two ways to cook kippers! Try these fishcakes and this recipe for baked kippers with apple butter, they taste amazing! To make the most of these fabulous dishes the kippers need to be really fresh!

Ingredients

Fishcakes
  • 300g mashed potato
  • 300g  kipper flesh
  • Squeeze of lemon
  • Salt and pepper
  • 100g plain flour, seasoned
  • 3 beaten eggs
  • 100g panko breadcrumbs
Sauce:
  • 6 tomatoes, concassed and sliced
  • Few sprigs of Thyme
  • 2 cloves garlic sliced
  • 50 ml olive oil
  • Salt and pepper
Apple butter kippers
  • 6 kippers
  • 1 bramley apple
  • 100g butter, softened
For frying:
  • Vegetable oil

Method

Mix the potato, kippers and lemon. Gently form into round balls, dip in flour, egg and breadcrumbs and fry at 160c for 2 to 3 minutes.

For the sauce warm the olive oil, tomatoes, thyme, and garlic for 1 minute.

For the apple butter kippers, grate the apple into soft butter, season, mix well and pop the kippers onto a baking tray. Dot with butter and grill for 5 minutes.
