Korean Lamb Chops with BBQ Courgettes

This Korean Lamb Chops with BBQ Courgettes is a quick, easy and totally tasty dish! Flavours of gochujang chilli paste, ginger, garlic, spring onions sliced and lime juice make the sauce which is drizzled over the top. This is the sort of food James makes at home! The sauce also works with fish and veg too!

Ingredients

  • 8 lamb chops
  • 25ml olive oil
  • Salt and pepper
  • 2 tbsp gochujang chilli paste
  • 4 tbsp soy sauce
  • 2 tsp sesame oil
  • 6 tbsp soft brown sugar
  • 5 cm piece ginger, grated
  • 1 clove garlic, peeled and chopped
  • 4 spring onions sliced
  • 1 lime juice and zest
To serve
  • 4 courgettes cut in ½ lengthways
  • 1 tbsp fresh mint, chopped
  • 1 tbsp coriander, chopped
  • Sesame seeds

Method

Place all the ingredients for the sauce into a small pan and heat gently to cook out the spices for 2-3 minutes.

To finish the sauce, add the zest and juice of the lime then take the pan off the heat.

Meanwhile drizzle olive oil over the courgettes, place onto the BBQ with the lamb chops. Season and turn a couple of times until roasted. This will take about 8 minutes.

When ready, place into a large serving dish. Spoon over the sauce and top with sesame seeds, chilli and herbs.
