Ingredients

  • 2  lemon sole , head removed cut in half lenghthways
  • 50g butter
Sauce:
  • 100g potted shrimp
  • 1/2 tsp gentlemens relish
  • 1 small bunch parsley chopped
Crumb:
  • 100g fresh breadcrumbs
  • 50g butter
  • Watercress

Method

Pan fry the sole in half the butter for 6 to 8 minutes turning halfway through season.

To make the sauce gently warm the potted shrimp with the relish and the remaining butter. Add the parsley lemon, season with black pepper.

Fry the breadcrumbs in butter until crisp.

To serve, pop the fish onto plates spoon over sauce then sprinkle over the crumb.
