Merlin’s New Year’s Cocktails

Kick off your New Year celebrations with these alcoholic and non-alcoholic cocktails from everyone's favourite mixologist, Merlin Griffiths! Choose from Ginger Switchel, The Last Word, Frozen Spicy Margarita or Ever After Margarita (non-alcoholic)!

Ingredients

Ginger Switchel (& Tonic) - makes 6-8
  • 50g fresh root ginger
  • 250ml water
  • 1 small birds eye red chilli
  • 4 tbsp honey
  • 80ml apple cider vinegar (preferably live ACV)
  • ½ lemon
The Last Word (serves 1)
  • 25ml Dry Gin, something bright and citrussy.
  • 25ml Green Chartreuse
  • 25ml Maraschino liqueur
  • 25ml fresh lime juice
  • 1 Brandied cherry and a tsp of its liquor
Frozen Spicy Margarita (serves 6)
  • 150ml Blanco Tequila or Mezcal (Mezcal works particularly well)
  • 150ml Ancho Reyes Liqueur
  • 150ml fresh lime juice
  • 120ml Agave nectar
  • 3 Orange twists
  • 3-4 scoops of ice
  • Red birds eye chillis for garnishing
Ever After Margarita (non-alcoholic)
  • 50ml Everleaf Forest 0%
  • 25ml fresh lime juice
  • 25ml fresh orange juice
  • 20ml agave nectar
  • 1 dash Angostura orange bitters
  • 1 disc of orange zest
  • Tajin spice to rim the glass

Method

Ginger Switchel (& Tonic)

  • Chop the chilli and ginger, and add to a small saucepan with the water and bring to a rolling boil.
  • Boil until reduced by around half.
  • Stir in the honey until dissolved, don’t be shy about the tablespoons either!
  • Add the juice of half the lemon and a few pieces of the zest for good measure.
  • Allow the mixture to cool to at least 30-40°C.
  • Add the ACV and pour the whole lot into a sealed jar to infuse.
  • After 24hours strain the mixture into a clean bottle ready for use.

For the garnish:

  • Whilst the Switchel is reducing, prepare some Fire Blossoms.
  • Nip the bottom of a red chilli off, and slice it lengthways eight times towards the stem, leaving it connected at the stem end.
  • Soak in cold water for a few minutes to allow the chilli to “blossom”.

To serve:

  • Take a rocks glass full of ice and pour 30-50ml of Switchel (according to preference) and top with Tonic, Soda or No-Secco. Garnish with your Fire Blossom and serve.
  • Try alternative tonic waters such as Fevertree Spanish Clementine Tonic Water.

 The Last Word

  • Add all except the cherry and cherry liquor to a shaker with lots of ice and shake well. Double strain into a chilled cocktail glass.

Frozen Spicy Margarita

Serves 6

Method:

  • Add the tequila, liqueur, lime juice and agave to a blender, twist the orange zests over the mix and discard the zests.
  • Add 3-4 good scoops of ice and blend to a smooth frozen consistency.
  • Pour into tumblers and garnish with a single small red chilli on a stick.

Ever After (non-alcoholic Margarita)

  • Moisten the rim of the glass with a lime wedge and dip into the Tajin, then fill the tumbler with ice.
    In a shaker, add everything else, twisting the orange zest to express its oils, and shake well with lots of ice.
    Strain into the ice filled glass, garnish with a lime wedge and serve.
  • Everleaf is a non-alcoholic spirit with smoky saffron and vanilla flavours. With the citrus and agave it almost tastes like a real Margarita!
