Oriental Crab and Prawns

This fresh and fragrant Oriental Crab with Prawns dish is super speedy warm salad. It's a great meal for any time of the week and is jam packed with fabulous flavours!

Ingredients

  • 6 crab claws
  • 18 prawns
  • 200ml Olive oil
Pesto:
  • 100g palm sugar
  • 1 x 5cm galangal, grated
  • 100g brown crab meat
  • 1 small bunch thai basil
  • 1 small bunch Vietnamese coriander
  • few sprigs mint
  • 2 tbs fish sauce
  • 2 tbs soy sauce
  • 50ml veg oil
  • 1 lime juice and zest
  • 2 red chillies diced
To serve:
  • Steamed pak choi
  • Sliced chillies
  • Coriander
  • Mint

Method

Steam the prawns and crabs for 15 minutes, pop on a platter.

To make the pesto, place everything into a pestle and mortar and pound. Sieve a little bit of crab to go into the sauce.

Steam the veg for 2 minutes.

Spoon pesto over the shellfish and pak choi then top with chillies and herbs.
