Ingredients

  • 2 x 200g sea bass, scored
  • 25 ml olive oil
  • knob of butter
  • salt and pepper
For the broccolini
  • 200g broccolini
  • 50ml olive oil
  • salt and pepper
For the sauce
  • 1 green chilli, chopped
  • 1 tbsp capers
  • 2 cloves of garlic
  • few sprigs of mint, parsley and oregano
  • 50ml olive oil
  • 1 lemon, juice and zest

Method

  1. Pan fry the sea bass in oil for 2-3 minutes, then flip over, add the butter and season. Cook for a further 1-2 minutes.
  2. Meanwhile, fry the broccolini in oil. Season, then roast in the oven for 5 minutes.
  3. Place all the dry ingredients for the sauce into a pestle and mortar and bash into a paste. Stir through the lemon juice, olive oil and the fish juices.
  4. To serve, spoon the sauce and broccolini onto a plate, top with fish and drizzle with herb oil.
