Pan Fried Sea Bass with Broccolini! Seared in the pan with a delicious salsa made with green chilli, capers, garlic, mint, parsley and oregano, olive oil and lemon zest!
Pan fry the sea bass in oil for 2-3 minutes, then flip over, add the butter and season. Cook for a further 1-2 minutes.
Meanwhile, fry the broccolini in oil. Season, then roast in the oven for 5 minutes.
Place all the dry ingredients for the sauce into a pestle and mortar and bash into a paste. Stir through the lemon juice, olive oil and the fish juices.
To serve, spoon the sauce and broccolini onto a plate, top with fish and drizzle with herb oil.
