Ingredients

Parsnip Soup
  • 400g parsnips, peeled and diced into a 1cm square (keep the peelings)
  • 2 apples diced
  • 400ml full fat milk
  • 100ml double cream
  • Salt and pepper
  • Knob of butter
  • Vegetable oil for frying

Garnish:

  • Cream
  • Herb  oil
Roasted Sherry and Honey Parsnips
  • 750g parsnips , cut into thick slices
  • 3tbs honey
  • 50g butter
  • 50ml water
  • Few sprigs of thyme chopped
  • 25ml sherry

Method

Parsnip Soup

  1. Put the parsnips, apples milk cream and curry powder in a pan and bring to the boil before reducing to a simmer for five minutes.
  2. Deep fry the peelings until they are crispy, and drain onto kitchen paper. Season.
  3. Blitz the soup until it is smooth, pour it back into a pan, and warm this through. Season.
  4. Spoon this into warm bowls, top with parsnip crisps, drizzle over the cream and herb oil.

Roasted Sherry and Honey Parsnips

Pre heat the oven to 200C

Pop the parsnips butter and a splash of water into a fry pan bring to the boil add the thyme and honey season pop in the oven for 10 minutes, pop back on the hob bring to the boil when all the liquid has gone finish with the sherry .
