Ingredients

  • 250g OO flour
  • 250g semolina flour
  • 3 eggs
  • 3 egg yolks
For the sauce:
  • 100ml olive oil
  • 3 cloves garlic
  • 1 red chilli, chopped
  • pinch chilli flakes
  • 1 small bunch parsley, chopped
To serve:
  • Grated Parmesan

Method

To make the pasta: place the flours and eggs into a kitchen aid with a dough hook attachment and mix for 2 minutes. Wrap the dough in clingfilm and chill for 30 minutes. Put through a pasta machine until thin then cut into spaghetti.

To make the sauce: heat the oil over a medium heat and, when hot, add the garlic, chilli and chilli flakes. Gently warm through then add the parsley.

Cook the pasta in boiling, salted water for between 30 seconds and a minute, until it rises to the top of the water. Drain and add to the sauce.

To serve: spoon into bowls then sprinkle over the Parmesan.
