Ingredients

For the chicken
  • 800g chicken breasts, sliced
  • 1 jar peanut and sesame chutney
  • 50ml vegetable oil
Pickle for the slaw
  • 100ml white wine vinegar
  • 50g caster sugar
  • Splash of water
  • 2 tsp black mustard seeds
  • 2 tsp chilli powder
  • 1 tsp salt
  • Juice and zest of 1 lime
For the slaw
  • 2 carrots, sliced
  • ½ white cabbage, sliced
  • ½  mouli, sliced
  • 1 red onion, peeled and sliced
  • A few sprigs of mint, chopped
  • A few sprigs of coriander, chopped
  • 2 tbsp tandoori onion chutney
For cucumber raita
  • ½ cucumber, diced
  • 200g thick Greek yoghurt
  • 4 tbsp mint sauce

Method

For the chicken, mix together the peanut and sesame and vegetable oil. Evenly coat the chicken with the marinade and thread onto skewers.

Heat the BBQ until hot and the coals are white. Place the skewers on and cook for 10 minutes until charred.

For the Indian slaw, heat the pickle ingredients together, then pour over the ingredients for the slaw. Serve in a bowl alongside the chicken.

For the raita, mix all the ingredients together. Serve in a bowl alongside the chicken.
