Ingredients
- 4 large pork chops
- 1 tsp seasalt
- 200g Broccolini
- 1 orange zest only
- ½ shallot peeled and diced
- 1 lime zest only
- 1 chilli chopped
- 1 clove garlic
- 25ml red wine vinegar
- 50ml olive oil
- 1 small bunch parsley and mint leaves only
- 100g butter
- Salt and pepper
- 100g butter soft
- 1 tbs miso
- Few sprigs chervil
Method
Heat a grill to high until hot, pop in the chops onto a baking tray, season the fat with salt and grill for 3 to 4 minutes then flip over and cook for a further 2 to 3 minutes and then rest.
Blitz all the ingredients together for the sauce.
Beat together everything for the butter then char the broccolini in a large frying pan in a little oil then add a little of the butter.
To serve, pile the chops onto a platter, dot with the rest of the butter, top with broccolini and spoon over sauce.
