Ingredients
- 1 small onion diced
- 5 cm ginger grated
- 2 garlic cloves diced
- 1 green chilli, diced
- 400g plum tomatoes
- 1 red pepper sliced
- 1 tbs ground coriander
- 1 tbs ground cumin
- 1 tsp turmeric
- 50g butter
- 12 peeled raw prawns
- 8 prawns in their shells
- 1 small bunch coriander
- 2 x 200d cod loins
- 25g butter
- Drizzle of veg oil
- Salt and pepper
Method
For the sauce, fry the onions in veg oil until deeply coloured, add the garlic and ginger, cook for another 2 minutes, add all the remaining ingredients, stir and gently bubble for 5 minutes. Pop in the prawns and cook for another 5 minutes, finish with coriander and butter.
Meanwhile, season the cod and cook in a drizzle of oil skin side down for 3 to 4 minutes. Flip over, add the butter and cook for another 3 minutes. Grill the shell on prawns until pink.
To serve, spoon the sauce onto plates, top with the fish.
