Ingredients
- 50g butter
- 400g cooked potato, riced
- 100g cooked pumpkin, riced
- 125g plain flour
- 2 egg yolks
- salt and pepper
- 100ml double cream
- 50ml white wine

- 4 x 200g cod portions

- 1 tbs Dijon mustard
- 1 shallot peeled and diced
- 1 small bunch coriander chopped
- 1 small bunch mint chopped
- 2 tbs capers

Method
Pan fry the cod in the oil for 2 to 3 minutes flip over season add the butter and cook for another 2 to 3 minutes. Chop all the ingredients together for the dressing.
Mix the potato, pumpkin flour and egg yolks together season, then roll into sausages 2cm thick by 20 cm long, using a little extra flour. Cut into 3 cm pieces plunge into boiling water and cook for 1 minute then drain.
Heat a large fry pan until hot add the cream wine and lemon bring to the boil then add the butter and add the Gnocci stir through and season.
To serve place the gnocchi onto plates top with the cod and dressing.
