Ingredients

Breakfast radish with bagna cauda dip (serves 6)
  • 300g peeled garlic
  • 200ml olive oil
  • 1 tsp smoked Malden Sea salt
  • 50g anchovies
  • 1 lemon, zest only
BBQ radish with mullet (serves 2)
  • Drizzle of olive oil
  • Salt and pepper
  • 150g radish
  • 1 tsp cumin seeds
  • 25ml honey
  • Splash of sherry vinegar
Pickled radish
  • 200g radish, halved
  • 50g caster sugar
  • 50ml water
  • Pinch of salt

Method

Breakfast radish with bagna cauda dip

Place the garlic and oil in a pan and warm through until soft then cool and pop into the food processor with the salt and anchovies. Spoon into a bowl.

Serve with breakfast radish, hot or cold.

BBQ radish with mullet

Heat the BBQ until hot and the coals are white.

Coat the fish in oil and season. Pop on a tray pop in the pizza oven for 3 to 4 minutes. For the radish, heat the oil and cumin seeds until they pop then add the radish and honey and cook for 2 minutes. Finish with the sherry vinegar. Pile the radish onto a plate top with fish.

Pickled radish

Heat the vinegar, salt and sugar and when the sugar has dissolved, pop in the radish. Take off the heat, cool and serve.
